Ash Gourd/White Pumpkin,one of the healthiest vegetable.People in diet can try different variations of Ash Gourd Recipe for weight loss.

 
Ash Gourd can be Cooked in different variation such as Petha, Raita,Sambar and Juice.
 
In this Post i have shared the recipe for Ashgourd Raita with Step by Step Photos.Raita which is the main side dish for Indian Biryani.The most Common raita is made with Onion and Cucumber.To get out of boring Raita Recipe i have tried this Pumpkin Raita.Kindly Check out the recipe and make a try.

Ingredients:

Ash Gourd/Venpoosanai/Poosanikai- 1 cup chopped

Curd-1 cup(Use Thick Curd)

Onion -1 chopped finely

Green chili-2

Coriander leaves for garnishing

Curry leaves- 1 sprig

For Tempering:

Oil-1 tsp
Mustard seeds-1/2 tsp
Channa dal-1/4 tsp
Cumin Seeds/jeera-1/4 tsp

 

Method:

Chop the Ashgourd into pieces and pressure cook with 1/4 cup water.(do not overcook,so that it becomes too soft)

Meanwhile in a kadai add Oil and allow to heat.
 
Add Mustard seeds,Urad dal and Chana dal and once splutters add Chopped Onion,Green Chilies,Curry leaves and coriander leaves.
 
Transfer the tempering to a thick curd.
 
Once the Ash gourd is cooked tranfer it to curd mixture and add salt and mix.
 

Step by step photo recipe:

1.Add chopped ash gourd/poosanikai in pressure cooker with 1/4 water or less.
 
 

2.For tempering add 1 tsp oil.

3.Add 1/2 tsp of mustard seeds and 1/4 tsp channa dal and jeera/ jeeragam.

 


4.Now add chopped onion and green chili.

 

5.Add curry leaves.

6.In a bowl add I cup curd and cooked ash gourd.

7.Add in tempering and mix with some needed salt.


8.Garnish with Coriander leaves and serve with vegetable pulao.
