Brinjal/Egg plant/Katharikkai kadayal recipe with step by step photos.This recipe is made with Onion,brinjal and green chilies.This is one the traditionl indian village recipe.This recipe is goes well with rice,idly and dosa.
 
Egg plant kadayal is made by adding Onion/Shallots,tomato,green chili,red chili,curry leaves,coriander leaves and brinjal in oil in a kadai.Cooking in mud pot tastes best.Once everything is completely cooked mash it with masher/mathu.It can also be cooked in pressure cooker for 5 whistles.For extra taste toast brinjal in flame till aroma arises and use it in kadayal.Checkout the recipe and make a try.

Ingredients:

Brinjal/Vankaya/Katharikai-6 Chopped
Oil-1/4 Cup
Mustard Seeds-1/2 tsp
Urad dal-1/4 tsp
Channa dal-1/4 tsp
Shallots-10 Chopped
Tomato-4 Chopped
Curry Leaves-1 Sprig
Coriander Leaves-2 tsp Coriander Levaes Chopped
Green Chili-2
Red Chili-6
Garlic Cloves-6 Cloves
Asafoetida-1/4 tsp
Turmeric Powder-1/4 tsp
Tamarind-1 tsp
Salt as needed.

Step by Step Photo Recipe:

1.Add Oil in a pan/Kadai.
 
 
2.Add Shallots,Green Chilies and Red Chilies.

3.Now add Tomatoes, Tamarind and Salt.

4.Further add Brinjal and Turmeric Powder.

5.Now Cook till it becomes mushy and soft.


6.For tempering add oil,mustard seeds,Urad dal,Channa dal and Asafoetida.

7.After it Splutters add Curry Leaves and Coriander Leaves.

8. Add into Brinjal Kadayal.

9.Now mash everything with mathu/masher.

                            Serve with Hot Rice,Idly or Dosa.

Notes:

  • Chilies can be added more if u need.
