Carrot Beans Poriyal/Carrot beans stir fry Recipe shared with step by step photos.This poriyal is made with carrot,beans and coconuts.It is one of the common side dish in indian food.This poriyal goes well with sambar rice,rasam rice and curd rice.
Carrot beans can be used to make gravy and sambar.Poriyal recipes are common in indian dishes and can be made with cabbage,carrot beans,snake gourd and many other vegetables.
The other version of carrot beans poriyal can be done by adding cabbage and cooked moong dal.
With carrot and beans gravy can be done by adding coconut paste and spices like coriander powder and chili powder.This gravy goes well with chapathi.

Ingredients:
Carrot-1 Large Sized Chopped
Beans-25 Chopped
Onion-1 Medium Sized Chopped Finely
Green Chilies-3 Chopped
Curry Leaves-1 Sprig
Coriander Leaves-1 tsp
Coconut grated-2 tsp
Turmeric Powder-1 Pinch
Oil-1 1/2 tsp
mustard Seeds,Urad dal and Chana dal-1 tsp
Salt as needed
Method:
Heat a kadai and add oil.once the oil is hot add mustard seeds,urad dal and chana dal.
once splutters add onion,green chilies,curry leaves,coriander leaves and salt and cook till it becomes soft.
Now add chopped carrot,beans,turmeric powder and salt and saute for 2 mins.
Add water,cover and cook till it becomes soft.
Once cooked add grated coconut,mix and cook for 1 min.
Step by Step Photo Recipes:
1.Heat a Kadai and add Oil.
3.Once it Splutters add Chopped Onions, Curry Leaves, Coriander Leaves, Green Chilies and salt and Saute till it becomes Soft.
5.Further add 1/4 Cup Water and Cover and Cook till it becomes soft(Stir occasionally to avoid from burning).
Notes:
- Green Chilies can be added more or less.
- You can also Pressure Cook Vegetables for 1 whistle.

- Once it Splutters add Chopped Onions, Curry Leaves, Coriander Leaves, Green Chilies and salt and Saute till it becomes Soft.
- Now add Chopped Carrot, Beans and Turmeric Powder and Saute for 2 Mins.
- Further add 1/4 Cup Water and Cover and Cook till it becomes soft(Stir occasionally to avoid from burning).
- Once Cooked add 2 tsp grated Coconut and Cook for 1 min and turn off the Stove.
