
Curd vada/Dahi vada/Thayir Vadai is one of the famous snacks recipe available in India.Curd vada is served as a snack for brunch or as a evening snack.Curd vada will be available in almost all Indian restaurant.Curd vada is available in two versions,South Indian version in which vada is soaked in curd with tadka(mustard seeds,urad dal,Cumin Seeds,Red Chilies,curry leaves),the another north Indian version In which curd vada is served with sweet sauce and Chili sauce topped with Kara boondhi.

Ingredients
Urad dal-1/2 cup
Curd-3 cups
oil-1 tbsp
Mustard seeds,urad dal and Chana dal-2 tsp
Cumin seeds-1 tsp
Curry leaves-2 sprig
Red Chilies-3 no
Coriander leaves-2 tbsp chopped finely
Salt to taste
Oil for deep frying

1.Soak Urad dal in water for 1 hr.


2.Add the soaked urad dal In blender.

3.Blend Smoothly by adding water little by little(5tbsp).

4.Add Salt and mix.


5.Heat a oil in a kadai.

6.Once the oil is hot,take small amount of dough and drop in Oil.

7.Cook in medium flame.

8.Stir continously and so that vada will cook throughout evenly.

9.Cook till it turns golden brown.

10.Place the vada in a bowl.

11.Add thick curd.

12.Heat a tadka pan and add oil.

13.Add Mustard Seeds,urad dal and Chana dal and allow it to splutter.

14.Now add Red Chilies and Curry Leaves.

15.Transfer the tadka to the vada.

16.Add Salt and mix.
17.Finally garnish with chopped coriander leaves.

18.Allow it to soak for min 1 hr.
Notes
1.Adjust water while grinding the batter.
2.If the batter is thick,add some water and adjust the consistency.
3.If the batter is in runny consistency,add some rice flour and mix.
4.If you want to serve curd vada immediately,add the vada in warm water and then soak in curd for 15mins and serve.
5.You can also garnish with Kara boondhi and serve.
