Cluster Beans stir fry/Kothavarangai Poriyal Recipe with detailed step by step photo recipes.Kothavarangai poriyal is made with Kothavarangai,onions,peanuts and some spices.This recipe is commonly prepared in indian kitchens.This Poriyal goes well with Rasam and sambar Rice.This is one of the best lunch box recipe when mixed with white rice.
 
Cluster beans can be used to make gravy and it goes well with chapathi.

Ingredients:


Cluster beans/kothavarangai- 1 cup chopped finely
Peanuts-4 tsp grounded
Oil- 1 tsp
Mustard seeds-1/4 tsp
Urad dal-1/4 tsp
Channa dal-1/4 tsp
Onion-1 finely chopped
Asafoetida/Hing-1/4 tsp
Chili powder-1/2 tsp
Curry leaves-1 sprig
Coriander leaves-1 tsp finely chopped
Salt as needed

 

Method:

Heat a kadai and add oil.Add mustard seeds,urad dal,chana dal and hing.Once splutters add onions and curry leaves and cook till it becomes soft.
 
Pressure Cook cluster beans or steam till it becomes soft.
 
Transfer to kadai and add chili powder,turmeric powder and salt.Once the raw smell goes off add crushed peanuts and saute for 2mins and serve.
 
you can also add shredded coconut finally and serve.

 

Step by Step Photo Recipe:

 

1.Blend Peanuts coarsely in a blender and keep aside.

2.Heat a Kadai and add oil.


3.Add Mustard Seeds,Urad dal,Channa dal and Asafoetida/Hing.

 


4.After it Splutters add Onions and Curry Leaves and saute till it becomes soft.

 

 


5.Now add in Cooked Cluster beans,Chili powder and needed Salt.


6.Once the raw smell of Chili Powder goes add Powdered Peanuts and mix for 1 to 2 Mins.

 

 

Notes:

  • Peanuts Can be added more if needed.
  • You can Add Cumin Seeds too.
