Sambar,One of the main important dish which plays a major role in Indian Foods.Sambar is the liquid food which is mainly made with Lentils,Mixed Vegetable and some Spice Mixes.Sambar is prepared by boiling Toor dal.It is then mashed and onions,tomatoes,vegetables and some spices are added and cooked.Whole some Dish which has Proteins and vitamins.
In Sambar,Vegetables like Moringa,Raddish,Ladys Finger are commonly added.In this post i have shared the recipe of Moringa/Drumstick sambar with step by step Photos.
I have used freshly prepared Sambar Powder by adding Spices like Coriander Seeds,Cumin,Pepper Corns,Chana dal and Red Chilies.The above mentioned ingredients are dry roasted and grinded into smooth powder.freshly prepared sambar powder tastes best.You can also prepare sambar powder in bulk quantity and store it in a airtight container.This Powder lasts for about 6 months to 1 year.

Drumstick/Murungakkai-1 Chopped
Brinjal/Kathrikkai-3 Slitted
Toor dal-1/2 Cup
Shallots-14 to 16
Tomato-1 Chopped
Curry Leaves-1 Sprig
Coriander Leaves-2 tsp
Chili Powder-1 tsp
Turmeric Powder-1/2 tsp
Garlic Cloves-8
Tamarind Paste-2 tsp
Coriander Seeds-1 tsp
Cumin Seeds-1/2 tsp
Chana dal-1/2 tsp
Pepper corns-1/4 tsp
Coconut Grated-2 tsp
Red Chilies-2
Fenugreek Seeds/Methi Seeds-1/4 tsp
Asafoetida/Hing-1/4 tsp
Oil-1 tsp
Mustard Seeds,Chana dal and Urad dal-1 tsp
or
Vadagam-1 tsp
Salt as needed
Method:
Preparing Sambar Powder:
Heat a kadai and add Coriander Seeds,Chana dal,Cumin Seeds,Pepper Corns,Red Chilies and Methi Seeds and dry roast in low flame till aroma aises.Once it is done add Coconuts and dry for 1 minute(do not over cook).
Once done transfer to a blender and blend into smooth powder and keep aside.
If you wish to do in large quantity dry roast every ingredient separately and use dry coconut.
Sambar Preparation:
In a Pressure Cooker add washes Toor dal ,Turmeric Powder and pressure cook till it becomes soft.
meanwhile heat a kadai and add Oil.
Add Mustard Seeds,Urad dal and Chana dal/Vadagam.Once splutters add shallots,tomatoes and curry leaves and cook till it becomes soft and mushy.
Add Moringa,Sambar Powder and Some water and boil.Once it is half cooked add Brinjal and cook.
Once vegetables gets cooked add Cooked dal(mash and add) and mix.further add hing/asafoetida and tamarind water and mix.
Boli as per your needed consistency.

1.Heat a Kadai and add Coriander seeds, Chana dal, Red Chili, Grated Coconut,Methi Seeds, Cumin Seeds and Pepper Corns and saute till aroma arises.
3.Add Toor dal, Garlic Cloves and Turmeric Powder in a pressure cooker with needed water and Pressure Cook till it becomes soft.
10.Once drumstick is half cooked add Brinjal/Egg Plant and cook till it becomes soft.

Directions
- Heat a Kadai and add Coriander seeds, Chana dal, Red Chili, Grated Coconut,Methi Seeds, Cumin Seeds and Pepper Corns and saute till aroma arises.
- Transfer to a blender and blend into smooth powder and keep aside.
- Add Toor dal, Garlic Cloves and Turmeric Powder in a pressure cooker with needed water and Pressure Cook till it becomes soft.
- Once cooked mash the dal and keep aside.
- Heat a kadai and add Oil.
- Once oil is hot add Mustard seeds, urad dal and chana dal or vadagam.
- Once it splutters add Shallots and cook till it becomes soft.
- Further add tomato, Curry Leaves and Salt and saute till it becomes soft.
- Now add Drumstick, Chili Powder, 2 tsp blended Sambar Powder and 1 Cup Water.
- 10.Once drumstick is half cooked add Brinjal/Egg Plant and cook till it becomes soft.
- 11.Further add Cooked dal, Hing and Tamarind Paste and Boil according to your needed Consistency.
