Pumpkin Soup/Healthy Recipe/Poosanikai Soup/gummadikaya soup

    Cooking Time:15 to 20 mins
    Serves:2

    Ingredients:

    Pumpkin-1 cup

    Water-1/4 cup
    Onion-1/2 chopped finely
    Garlic Cloves-2 big cloves chopped finely
    Ginger-1 inch chopped finely
    Pepper-1/2 tsp or more as per taste
    Oil-1 tsp
    Salt as needed
    Coriander leaves for garnishing

    Optional Ingredients:

    Vegetable Stack-1/4 cup (alternative to water)
    Heavy Cream-1/2 tsp

    Step by step Photo Recipe:

    1.Heat a kadai/pressure cooker and add 1 tsp of oil/Butter.


    2.Add in 1/2 chopped Onion and saute for 30 Secs.


    3.Now add chopped Garlic cloves and Ginger and mix for 30 secs.


    4.Now add the pumpkin chunks and Salt.


    5.Saute for 1 Min and add in 1/4 cup of water or vegetable  stock.


    6.Cook for 3 whistles and transfer to blender/Mixie jar.


    7.Blend into smooth paste and sieve.

    8.Garnish with Coriander leaves and Sprinkle some Pepper and Soup is ready to serve.

     Notes:

    • For better taste make soup in kadai/Pan.
    • You can also add butter and fresh cream.
