Ragi Kali Recipe/Kezhvaragu Kali/How to make Ragi kali

Ragi kali is one of the famous and authentic recipe of south india,which is prepared with Ragi.This recipe is best during Summers.Ragi Kali goes well with Country Chicken Curry,Mutton Curry,Spinach Sambar and Curd.With Ragi we can make Dosa,Koozh,Biscuit and Puttu.

Ragi is packed with full of nutrients.It is rich calcium ,vitamins and minerals.Incorporate Ragi in your diet weekly twice to avoid calcium deficiency.

Ingredients

Ragi Flour- 1 1/2 Cup

Wheat Flour-1 1/2 Cup

Water-5+3 Cups

Salt-1 1/2 tsp

Cooked Rice-1 cup(optional)

Step by Step Photo Recipe

1.Add 5 Cups Water in a heavy bottom pan or kadai.

2.Add Salt.

3.In a Mixing Bowl add Ragi Flour.

4.Then add Wheat Flour.

5.Mix everything.

6.Add 3 Cups water and mix without any lumps.

7.Once the water starts to boil add the mixture slowly.

8.Continously stir to avoid lumps.

9.Stir in a medium flame and add 1 cup rice.(you can also skip this step)

10.Stir continuously untill water gets completely absorbed.

11.continuously stir the mixture,at one point everything comes together.

12.To check the right consistency,wet the hands and touch the kali,it should not stick to hands.If it sticks stir for some more time in low flame.

Notes

1.You can also make kali by using Ragi Flour alone.

2.You can store Ragi kali in refrigerator for 2 days.

3.To make ragi koozh mix the kali with curd and water.Add Chopped onions and drink.
