Hello all, this is my first blog post and i am happy to share Rava Kesari as my first post.This is one of the most popular indian sweets recipe and is the simple on the go sweet recipe.It has other names like Sooji Kesari,Sooji Halwa,Semolina Kesari and Kesari bath.
Rava Kesari is a indian Sweet Recipe made with Sooji/Rava,Clarified Butter/Ghee and Sugar.

Finally some tips for tastiest Rava Kesari.Here i have used food colour,you can replace it with saffron soaked in Milk.Try to use rich aroma Ghee.while stiring Rava,try to stir continously to avoid lumps.You can also end up kesari with adding Pineapple or apple Chunks.

Choosing Ingredients:
Ghee/Clarified Butter:Choose home made Ghee/Clarified butter for better taste.
Ingredients:
Rava/Sooji/Semolina – 1/2 cup
Sugar- 3/4 cup
Water – 1 cup
Ghee /Clarified Butter- 2 tsp+1/4 cup
Cardamom Powder/Elachi Powder-1 tsp
Cashew nuts/Kaju-10
Dry grapes/Kishmish/Raisins -10
Yellow food colour a pinch/Kesari food colour/Saffron water
Alternative Ingredient:Yellow Food colour can be replaced with saffron.
Method:
Heat a heavy bottom pan/kadai.Add a 2tsp of ghee and saute cashews and dry grapes till it turns golden brown.keep it aside.
Add a tsp of ghee in kadai/pan and add rava and fry for 3 to 4 mins,till it turns golden brown.Keep it aside.
Boil 1 cup of water and add in food colour/saffron water.
Now add the rava and mix till it gets thicken.
Add 3/4 cup of sugar and stir till it dissolves.
Add cardamom powder and mix.
Finally add the roasted cashews and dry grapes.
Rava Kesari with Step by Step Pictures:
1.Heat 2 tsp of ghee/clarified butter in a pan/kadai and add 10 cashews and 10 raisins in low flame.once it turns into golden brown take and keep it aside.
2.Now add Rava/sooji in same kadai and roast for 5 minutes or till it turns aromatic.Keep aside.
3.Add 1 cup of water in same kadai and boil.
4.Now add Food colour/saffron water.
5.Add Roasted Rava and stir continuously without any lumps still it absorbs water.
6.Add in a 3/4 cup of sugar or depending upon your taste.
7.Stir continuously and add 1/4 cup ghee and add cardamom powder/Elachi.
8.Now add roasted cashes and raisins.
9.Rava kesari is ready to serve now.
