Seeraga Samba Mushroom Briyani/How to Make Mushroom Briyani

 

Ingredients:


Seeraga Samba Rice/Zeera Rice-3/4 cup
Water-1 1/4 Cup
Onion-1 Sliced
Tomato-1 Sliced
Green Chilie-1 Slited
Ginger And Garlic Paste-2 tsp
Mushroom-1  to 1 1/4 Cup Sliced or Chopped
Chili Powder-1/2 tsp
Mint Leaves-1 tsp Chopped
Coriander Leaves-1 tsp Chopped
Turmeric Powder a Pinch
Salt as needed
Oil-2 tsp
Ghee-2 tsp

Briyani Masala:


Cinnamon Stick/Pattai-1 inch.
Cloves/Lavangam-2
Star Anise/Natchathira Sombu-1
Bay Leaf/Briyani Illai-1
Elachi/Elakkai-2
Marathi Moggu/Indian capers-1


Step by Step Photo Recipe:

1.Add 2 tsp Oil and 2 tsp Ghee in Pressure Cooker.


2.Add All Briyani Masala Ingredients(I have not included Bay Leaf and Elachi).

 


3.Add Ginger Garlic Paste and saute till it turns golden browm.

 

4.Add Onions and Green Chili and saute till it turns Golden brown.

 
 


5.Add Mint Leaves and Coriander Leaves and saute for a minute.

 
6.Add in Tomatoes and mix till it becomes soft and mushy.


7.After add Mushrooms, Chili Powder and a pinch Turmeric and  Cook for 5 Mins.


8.Add 1 1/4 Cup water and allow it to boil.


9.Further add in Soaked Rice and Check for Salt and Pressure cook for 1 Whistle.

 


10.Open the lid after the pressure releases and a tsp of ghee and mix and serve hot with Raita.



 



Notes:

  • Green Chili can be added more if needed.
  • Water ratio for Briyani is 1:2 always.(here mushroom releases some water so 1/4 water is reduced)
