Spring Onion Stir Fry/Vengayathal Poriyal Recipe with step by step photos.Spring Onion Stri fry is made with Spring Onions,Onion,Curry leaves,Red Chili Powder and Coconuts.This is one of the healthiest recipe and give it a try.This recipe goes well with rasam rice and sambar rice.
 
Spring Onion is a healthy vegetable,which is rich in iron.Spring Onion is mostly used in chinese recipes.This stir fry is one of the recipe you can add it to your diet.
 
My grandmother used to make this recipe.grand ma’s recipes are always special.I just love to eat this stir fry with hot rice.
 
This recipe is prepared by sautéing onions/Shallots,curry leaves in Oil.Make sure to use extra amount for oil,so that stir fry tastes better.Then add the cooked spring onions,chili powder and saute.finally add grated coconut and mix.

Ingredients:

 
Spring Onions-2 Bunches chopped Finely
Shallots-12 to 15 Chopped Finely
Turmeric Powder-1/4 tsp
Chili Powder-1/2 tsp
Curry Leaves-1 sprig
Coriander Leaves-1 tsp Chopped
Coconut Grated-1 tsp
Oil-1 1/2 tsp
Mustard Seeds,Urad dal and Chana dal-1 tsp
Salt as needed
 

Step by Step Photo Recipes:

 
1.Add Chopped Spring Onions with required Water and 1/4 tsp Turmeric Powder and boil For 5 Mins.
 

 

 

 
2.Strain the water and keep aside.

3.Heat a Kadai and add 1 1/2 tsp Oil and Mustard Seeds,Urad dal and Chana dal.
 

 

 

4.Once it Splutters add Chopped Shallots.

 
 

5.Further add Curry Leaves and Coriander Leaves.

 
 

6.Once Shallots becomes soft add Boiled Spring Onions.

 
 

7.Add Required Salt and Chili Powder and Cook in Medium Flame till Oil gets Separated.

 
 
 

8.Finally add grated Coconuts and switch off.

 

 


Serve with Hot rice.

Notes:

  • Salt and Chili powder can be added as per your taste.
