Rasam is a clear and spicy South indian Soup.It is traditional recipe of south India.It is eaten with Rice or Consumed alone as a Soup.Rassam is Prepared with Tamarind,Tomatoes,Garlic,Curry Leaves and Coriander Leaves.Spices like Cumin Seeds and Pepper Corns are used.Some uses Jaggery for sweetness.
There are many other variations in Rasam namely Tomato Rasam,Garlic Rasam,Pepper Rasam,Tamarind Rasam,Kollu Rasam and many others.Rasam taste different with different proportions of ingredients used in it.
Rasam is considered to be a healthiest dish because it is packed with full of vitamins and minerals.Rasam is rich in Vitamin A,C,Folic acid,Potassium,Iron,Zinc,Copper and Magnesium.

Ingredients:
Tomato-2 Medium Sized
Tamarind-1 Small Gooseberry Size(Soak and Squeeze Pulp)
Red Chilli-3
Garlic-6 to 7 Cloves
Cumin Seeds-1 tsp
Peppercorns-1/2 tsp
Turmeric Powder-1/4 tsp
Curry Leaves-1 Sprig
Coriander Leaves-2 tsp
Asafoetida/Hing-1/2 tsp
Oil-1tsp
Vadagam-1/4 tsp
or
Mustard Seeds and Urad dal-1 tsp
Water-2 Cups
Salt as needed
Method:
In a Mixing Bowl add Tomatoes and Squeeze.
Add Tamarind Pulp,Curry Leaves,Coriander Leaves and Turmeric Powder.
Add Red Chilies and Required amount of Salt and add needed water and keep aside.
Heat a kadai and add oil.
Once the oil is hot add Vadagam or Mustard Seeds,Urad dal and chana dal.
Once splutters add Crushed Garlic Cloves and Pepper and cumin Powder.
Saute till aroma arises.
Now add Rasam mixture and allow it to boil.
once it starts to boil immediately switch and Cover.(over boiling changes the taste of Rasam)

2.Add Tamarind Pulp to the bowl.
3.Now add Curry Leaves and Coriander Leaves.
4.Further add Turmeric Powder.
5.Then add Red Chilies,needed Salt and 2 Cups Water.
6.Heat a Kadai and add 1 tsp Oil.
7.Once the Oil is Hot add Vadagam or Mustard Seeds and Urad dal.
8.Once it Splutters add Asafoetida and mix till aroma comes.
9.Further add Crushed Garlic Cloves,Crushed Cumin Seeds and Peppercorns and saute till aroma arises(do not overcook).
10.Finally add the Rasam mixture in Kadai and Cook in medium Flame.
